This looks better than it tastes! Okay, no it was pretty good. Just the tofu was a little wack. I was inspired by this. I made this cabbage salad and added raisins and pumpkin seeds, just like the cabbage salad they sell at my work. I served it with fried mushrooms (I used canola oil), grated carrot, spinach wilted in a dash of cider vinegar, brown rice with nutritional yeast and salt and pepper. I only had medium-firm tofu in my fridge which I find doesn’t fry as well as firm tofu so I just toasted some sesame seeds and rolled tofu cubes in them. I had this with Little Creek dressing. Next time I would definitely use firm tofu.
