Cream of swiss chard soup with this, ground almonds and rice cakes with spicy hummus. Huge bunches of organic swiss chard were on sale at my work for $1.50 last week so that’s where the inspiration for this soup came from. To make the soup sautee onion and garlic in oil until onions are translucent. Add a little water to keep from burning. Chop swiss chard and add to pot in small amounts until it’s all wilted. Add 2 very small potatoes, peeled and chopped. Add vegetable stock to cover all ingredients and watch an episode of anime until your vegetables are cooked. Let soup cool (or not if you have a nice blender), blend soup. Return to pot and add desired amount of almond milk, season with salt and pepper.
